You’ll see the views options on the left hand side in the navigation pane. Like the contacts folder, all you have to do is click on a button for the view to change. You can sort notes by icons, as a list, by notes created in the last seven days, by colour, or by category.

 

You can also use the buttons on the standard toolbar (labelled Large Icons, Small Icons, and List) to change how your notes are displayed.
