Another way to customize Project to suit your needs is by customizing its options. The Options dialog can be opened by clicking the Tools menu and clicking Options. All options that you set in here will only apply to the current project, unless you click the Set as Default option (which is not available for all choices). Note that no tab has a Reset option, so make sure you remember which options you changed.
